I use homemade mayo, because there are ingredients in store bought that I'm not supposed to eat like soybean oil, sugar and vinegar, not to mention the preservatives.
Here's the recipe.
1 egg
2 tbs fresh lemon juice
1/4 tsp mustard powder
1/4 tsp sea salt
1 cup olive oil
1. Beat egg on low speed of blender.
2. Add lemon juice and seasoning.
3. Continue blending, slowly drizzle in olive oil.
4. Blend until smooth.
Refrigerate.

Sounds simple enough. I've always had the impression that making mayonnaise was a test of culinary skill.
How much does it make? Do you like it? I have made mine before but didn't like it.
I do like it. I would guess it makes over a cup since there's a cup of olive oil and the egg. Maybe a cup and a quarter.
